depending on chocolate content the chocolate is graded as dark, very dark and bitter. generally dark chocolate contains about 55 per cent cocoa, bitter about 70 per cent and very dark chocolate contains 85 per cent cocoa.

Dark chocolates contain flavinoids which may be good for the heart if taken in moderation.
